Alaskan Halibut Recipe with Vegetables

Ingredients:

  • 4 Alaskan Harvest halibut fillets, thawed
  • 4 sheets of aluminum foil (12×18 inches each)
  • ¼ teaspoon lemon pepper
  • 2 cups red bell pepper strips*
  • 2 cups zucchini, sliced*
  • 2 cups mushrooms, sliced*
  • 1 teaspoon Italian seasoning, dried
  • ½ cup Cheddar cheese, shredded
  • * = Use any combination of fresh or frozen vegetable such as sweet onions, carrots and broccoli.

Directions:

  1. Preheat oven to 450’F or grill to medium-high. Spray foil with nonstick cooking spray.
  2. Place 1 fillet of halibut on aluminum sheet. Sprinkle with lemon pepper. Top with 1/2 cup of EACH vegetable. Sprinkle with Italian seasoning.
  3. Bring up sides of foil and double fold. Double fold ends to form a packet. Repeat to make four packets.
  4. Bake 16-20 minutes on a cookie sheet or Grill 12 to 15 minutes in covered grill.
  5. Sprinkle with cheese before serving.

Clam Fritter Recipe with Alaskan Razor Clams

Ingredients:

  • 2 cups Razor Clams, cleaned, chopped
  • 1/4 cup reserved clam juice
  • 7 tbsp. flour
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • Black pepper or lemon pepper
  • 5 eggs, lightly beaten
  • 6 scallions, finely chopped
  • 1 tsp. parsley
  • 2 tbsp. finely chopped green pepper
  • 1/2 tsp. Worcestershire sauce

Directions:

  1. In a medium bowl, combine all ingredients and mix well.
  2. Heat 3 to 4 cups of peanut oil to 360°F and drop mixture by spoonsful into hot oil, frying until golden brown.
  3. Remove with slotted spoon and drain on absorbent paper, repeating until all are done.
  4. Serve with lemon wedges, tartar sauce or seafood cocktail sauce. (They are best served immediately but can be kept warm in a 250°F oven for up to 30 minutes.)

Lobster Beach Bake Recipe

Ingredients:

  • 4 Maine Lobster Tails 6/8oz
  • Approx. 2 quarts water (enough to cover all ingredients)
  • 1/2 teaspoon salt
  • 2-4 ears sweet corn, shucked
  • 2-4 small boiling onions, skins removed
  • 8-12 small red potatoes, scrubbed & washed

Directions:

  1. In a 6-quart pan, bring water and salt to boil. Place vegetables in boiling water. Cover and simmer 8 minutes.
  2. Plunge lobster into water with vegetables (add more hot water if necessary). Return to boiling. Reduce heat and simmer lobster (approx 18-20 minutes. Start timing when you first see steam from the pot.
  3. Pull lobster from pot, drain and cool 5-10 minutes.
  4. Remove vegetables just before serving.
